3 tablespoons Chosen® Foods 100% Pure Avocado Oil
4 pounds Creekstone Farms® USDA Choice Beef Premium Black Angus Boneless Bottom Round Roast, cut into 1-inch pieces
2 green bell peppers, chopped
1½ large Sweet Onions chopped
1 medium jalapeño pepper, minced
6 garlic cloves, minced
1 tablespoon chili powder
1 tablespoon chopped fresh oregano leaves
1 tablespoon ground black pepper
1 tablespoon ground cumin
1½ teaspoons salt
2 cans (10 ounces each) diced tomatoes with green chiles
3¾ cups beef broth 2 cans (15 ounces each) pinto beans
2 packages (8 ounces each) yellow rice
¼ cup all-purpose fl our 1.
In large saucepot, heat 1½ tablespoons oil over medium-high heat until very hot. Add half the beef and cook 5 minutes or until browned, stirring occasionally; transfer beef to bowl. Repeat with remaining 1½ tablespoons oil and beef.
2. Drain excess fat from saucepot. Reduce heat to medium. Add bell peppers, onions and jalapeño; cook 10 minutes, stirring occasionally. Stir in garlic, chili powder, oregano, black pepper, cumin, salt and beef, and cook 30 seconds, stirring constantly. Stir in tomatoes and 3 cups broth; heat to boiling. Reduce heat to medium-low; simmer 1 hour or until beef is tender, stirring occasionally.
3. Meanwhile, prepare beans and rice as labels direct.
4. In small bowl, whisk together ﬂ our and remaining ¾ cup broth. Stir ﬂ our mixture into saucepot and simmer 15 minutes. Serve Carne Guisada with beans and rice.
