Beer-Poached Mahi Mahi Tacos

2 bottles (24 ounces) Mexican-style lager beer

2 teaspoons chili lime rub

1½ pounds mahi mahi fillets, cut into 1-inch pieces

1 large mango, peeled and diced

 8 soft taco flour tortillas

½ cup guacamole salsa

8 leaves butter lettuce, shredded

Diced red onion and fresh cilantro (optional)

 

 

1.      In medium saucepan, heat beer and 1 teaspoon chili lime rub to a simmer over medium-high heat; add fish and cook 6 minutes or internal temperature of fish reaches 145°.

 

2.      In small bowl, toss mango and remaining 1 teaspoon chili lime seasoning.

 

3.     On microwave-safe plate, stack tortillas between 2 damp paper towels; heat in microwave oven on high 30 seconds or until warm. Fill tortillas with fish, mango mixture, guacamole salsa and lettuce; top with onion and cilantro, if desired.
